- 1 ½ cup cooked green lentils, drained
- ¼ cup crumbled feta
- 3 tablespoons chopped parsley
- 2 tablespoons chopped onion
- 1 tablespoon extra virgin olive oil, plus more for drizzling
- ½ tablespoon lemon juice
- ¼ teaspoon salt, or to taste
- ⅛ teaspoon pepper, or to taste
- 6 slices of bread (ciabatta or artisanal bread)
Instructions
- In a salad bowl, smash half of the lentils using the back of a spoon or a fork. Add the remaining ingredients to create the lentil dip and mix until well combined. Taste and adjust the seasoning as needed.
- Preheat your oven to 200°C (400°F). Place the sliced bread on a baking tray and toast until golden and slightly crispy, about 5 minutes, watching closely to avoid burning. Alternatively, toast the bread in a toaster or skillet.
- Top each slice of toasted bread generously with lentil dip and, if desired, rub a garlic clove on each slice before adding the dip. Serve at room temperature and enjoy!
Notes
For extra flavor, consider adding minced garlic or fresh herbs to the lentil mixture.
Make sure the bread is toasted just right to hold the dip without getting soggy.
