Description

Kapuska is a delightful Turkish stew that combines tender ground beef and fresh cabbage in a hearty sauce. With its rich flavors and simple preparation, this dish is ideal for a quick and satisfying dinner that warms the soul.


Ingredients

  • 2 tbsp olive oil
  • 1 onion, thinly sliced
  • 1 red bell pepper, sliced
  • 3 cloves garlic, minced
  • 1/2 lb ground beef
  • 2 tbsp tomato paste
  • 1 tsp Aleppo pepper
  • 1 tsp sweet chili pepper or paprika
  • 1 tsp kosher salt
  • 1/4 large head cabbage, thinly sliced
  • 1 cup water
  • 1 lemon, juice of
  • 1/2 cup chopped parsley

Instructions

  1. Heat olive oil in a large pan over medium-high heat.
  2. Sauté the onion and red bell pepper until softened, around 5 minutes.
  3. Add minced garlic and ground beef, cooking until the beef is browned and broken up.
  4. Stir in tomato paste, Aleppo pepper, sweet chili pepper, and salt. Cook for 1 to 2 minutes.
  5. Add the sliced cabbage and mix well, cooking for a few minutes until it softens slightly.
  6. Pour in water, stir, and cover. Reduce heat to medium-low and let simmer for 20 to 30 minutes until the cabbage is tender and the stew is slightly saucy.
  7. Finally, stir in lemon juice and chopped parsley. Adjust salt to taste before serving.

Notes

Feel free to adjust the spice levels to suit your taste.
This stew can be refrigerated and reheated for an easy meal later on.
Garnish with extra parsley for added freshness if desired.
