- 2 tbsp olive oil
- 1 onion, thinly sliced
- 1 red bell pepper, sliced
- 3 cloves garlic, minced
- 1/2 lb ground beef
- 2 tbsp tomato paste
- 1 tsp Aleppo pepper
- 1 tsp sweet chili pepper or paprika
- 1 tsp kosher salt
- 1/4 large head cabbage, thinly sliced
- 1 cup water
- 1 lemon, juice of
- 1/2 cup chopped parsley
Instructions
- Heat olive oil in a large pan over medium-high heat.
- Sauté the onion and red bell pepper until softened, around 5 minutes.
- Add minced garlic and ground beef, cooking until the beef is browned and broken up.
- Stir in tomato paste, Aleppo pepper, sweet chili pepper, and salt. Cook for 1 to 2 minutes.
- Add the sliced cabbage and mix well, cooking for a few minutes until it softens slightly.
- Pour in water, stir, and cover. Reduce heat to medium-low and let simmer for 20 to 30 minutes until the cabbage is tender and the stew is slightly saucy.
- Finally, stir in lemon juice and chopped parsley. Adjust salt to taste before serving.
