Description

This Juicy Grilled Tequila Lime Marinated Chicken is packed with flavor thanks to a zesty marinade of tequila, lime juice, and spices. It’s easy to prepare and perfect for a quick dinner or a healthy meal. Enjoy the irresistible taste of grilled chicken that everyone will love!


Ingredients

  • 2 lbs boneless skinless chicken thighs
  • ¼ cup tequila blanco
  • ¼ cup lime juice
  • 2 tablespoons olive oil
  • 1 tablespoon dried cilantro
  • 1 tablespoon packed dark brown sugar
  • 1 tablespoon garlic paste
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon tomato powder
  • ½ teaspoon chipotle powder
  • kosher salt & fresh ground black pepper, to taste
  • fresh sliced lime, chopped cilantro- for garnishes, optional

Instructions

  1. Place the chicken thighs into a large resealable plastic bag or bowl and add tequila, lime juice, olive oil, cilantro, brown sugar, garlic paste, cumin, paprika, tomato powder, chipotle powder, and salt/pepper. Massage the mixture into the chicken until well coated.
  2. Seal the bag or cover the bowl and refrigerate to marinate for at least 2 hours, preferably overnight.
  3. Before grilling, let the marinated chicken sit out to reach room temperature.
  4. Preheat the grill to medium-high heat (375-450°F) and grease the grates. Grill the chicken for about 4-5 minutes per side until it reaches 165°F internal temperature. Remove from grill and rest for 10 minutes.
  5. For stovetop grilling, heat a grill pan over medium heat, brush with oil, and grill chicken for 5-7 minutes per side until it reaches 165°F. Remove and rest on a platter.

Notes

Rest the chicken after grilling to retain moisture.
Use fresh herbs for a brighter flavor.
