Description

This Jalapeno Popper Cucumber Salad combines fresh cucumbers, spicy jalapeños, and creamy cheese dressing for a quick and delicious meal. Perfect for summer parties or as a healthy side dish!


Ingredients

  • 2 large cucumbers, thinly sliced (about 4 cups)
  • 1 large jalapeño, seeded and finely diced
  • ¼ cup (40 g) red onion, finely diced
  • 3 tablespoons cream cheese, softened
  • 2 tablespoons sour cream
  • 1 tablespoon dry ranch seasoning
  • ¼ cup (28 g) sharp cheddar cheese, finely shredded
  • 2 slices bacon, cooked and crumbled

Instructions

  1. In a large bowl with a tight-fitting lid, combine sliced cucumbers, diced jalapeño, and red onion. Set aside.
  2. In a separate small bowl, blend softened cream cheese, sour cream, and dry ranch seasoning until smooth.
  3. Gently fold in shredded cheddar cheese and crumbled bacon into the cream cheese mixture.
  4. Pour or spoon the cream cheese mixture over the vegetables in the large bowl.
  5. Secure the lid and gently shake to coat the vegetables evenly, or stir carefully to combine. Scrape down the sides as necessary.
  6. Serve immediately or refrigerate for at least 30 minutes for enhanced flavor.

Notes

For a spicier salad, leave some seeds in the jalapeño.
This salad can be made a few hours ahead and kept in the fridge until serving.
Feel free to add more bacon for extra flavor!
