Description

This Italian Sausage Gnocchi Soup combines flavorful sausage, vibrant vegetables, and creamy broth for a quick, cozy meal any night of the week. Perfect for family dinners!

Ingredients

Scale
  • 1 tablespoon olive oil
  • 3 cups diced soup vegetables (1 medium onion, 2 sticks celery, 2 medium carrots)
  • 1 pound mild Italian sausage
  • 2 cloves minced garlic (about 2 teaspoons)
  • 2 teaspoons Italian seasoning
  • onion & garlic powder (to taste)
  • salt & black pepper (to taste)
  • 1 tablespoon tomato paste
  • 3 cups chicken broth
  • 1 (1-lb) package gnocchi
  • 1 cup heavy cream
  • 1 tablespoon cornstarch
  • 2 cups chopped fresh spinach
  • ½ cup grated parmesan cheese

Instructions

  1. Heat a large pot over medium to medium-high heat and add the olive oil.
  2. Sauté the diced soup vegetables until softened, about 5 minutes.
  3. Add the mild Italian sausage and cook until browned, breaking it into crumbles. Stir in the minced garlic.
  4. Reduce heat to medium, add Italian seasoning and tomato paste, and cook for 1-2 minutes.
  5. Pour in the chicken broth, scraping any browned bits from the pot, and bring to a boil.
  6. Add the gnocchi and simmer according to package directions until cooked through.
  7. Lower the heat, whisk together the heavy cream and cornstarch until smooth, then stir into the soup along with the spinach and parmesan.
  8. Simmer for an additional 5-8 minutes and adjust seasoning as needed. Serve hot.

Notes

For a spicier kick, use spicy Italian sausage.
Feel free to substitute the soup vegetables with any favorites or frozen options.
This soup can be thickened further by adding more cornstarch mixed with cream.
