- 2 tbsp chipotle in adobo sauce
- 2 tbsp honey
- 2 tbsp avocado oil
- 1 tbsp lime juice
- 1 garlic clove, minced
- ½ tsp cumin
- ½ tsp salt
- 2 salmon fillets, cut into 1” cubes
- ¼ cup mayo
- 2 tbsp chipotle in adobo sauce
- 1 tbsp lime juice
- 2 cups cooked white rice
- 1 avocado, sliced
- ¼ cup chopped cilantro
- 1 cup roasted sweet potatoes (optional)
- 1 cup chopped red cabbage (optional)
- 1 cup sautéed kale (optional)
Instructions
- In a medium bowl, whisk together the chipotle in adobo sauce, honey, avocado oil, lime juice, garlic, cumin, and salt to create the marinade.
- Cut the salmon into 1-inch cubes and stir them in the marinade to ensure they are well coated. Allow the salmon to marinate while preheating the oven, or refrigerate for up to 12 hours for more flavor.
- Preheat your oven to 450°F (232°C) and line a baking sheet with parchment paper. Cook the rice according to package instructions if serving it with the dish.
- Transfer the marinated salmon using a slotted spoon to the prepared baking sheet. Bake for 12-15 minutes, depending on the salmon's thickness. Broil for an additional 1-2 minutes, then remove from the oven.
- To prepare the chipotle mayo, whisk together mayo, chipotle in adobo sauce, and lime juice in a small bowl.
- Assemble the bowls by dividing the rice into two bowls, topping with salmon, avocado slices, and additional vegetables if desired. Drizzle with chipotle mayo and sprinkle with cilantro before enjoying.
Notes
For softer salmon, marinate for a longer time in the fridge.
