Description

Ingredients

  • 2 pounds chicken breast
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1 cup bbq sauce
  • 1/4 cup honey
  • 1 cup long grain rice
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, canned or frozen
  • 1 head romaine lettuce, chopped
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup pickled onions
  • 1/4 cup chopped cilantro
  • 1/4 cup ranch dressing

Instructions

  1. Cook the rice according to the package instructions.
  2. In a large skillet, heat the olive oil over medium heat.
  3. Season the chicken with salt, pepper, paprika, and garlic powder.
  4. Add the chicken to the skillet and cook until golden brown and cooked through.
  5. In a bowl, mix the BBQ sauce and honey together, then pour it over the chicken in the skillet.
  6. Stir to coat the chicken well as it simmers in the sauce for a few minutes until heated.
  7. Assemble the bowls by placing rice at the bottom, followed by black beans, corn, and the honey BBQ chicken.
  8. Top with chopped romaine lettuce, shredded cheddar cheese, pickled onions, and cilantro, finished with a drizzle of ranch dressing.

Notes

Make sure to drain and rinse the black beans before adding them to the bowls.
You can customize the toppings based on your preferences, adding things like avocado or jalapeños.
