Description

This Healthy Blueberry Cobbler is a delightful mix of fresh blueberries and almond flour, making it a great choice for a quick, healthy dessert that’s packed with flavor.


Ingredients

Scale
  • 7 cups blueberries
  • 2 teaspoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 2 1/2 tablespoons arrowroot flour
  • 1/4 cup maple sugar
  • 1 1/2 cups blanched almond flour
  • 1/2 cup arrowroot flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon fine grain sea salt
  • 1/4 cup coconut sugar
  • 1/4 cup + 2 tablespoons coconut oil
  • 1/3 cup unsweetened almond milk
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon almond extract

Instructions

  1. Preheat the oven to 375° F and lightly grease a 9 x 13” baking dish with coconut oil.
  2. In a large bowl, mix the blueberries, lemon juice, arrowroot flour, and sugar. Transfer to the prepared baking dish.
  3. In another bowl, combine almond flour, arrowroot flour, baking powder, salt, and sugar. Cut in the solid coconut oil until crumbly. Stir in almond milk and vanilla extract until a dough forms.
  4. Scoop the dough in 1/4 cup amounts, flatten them, and place on top of the blueberry layer. Bake for 35 minutes until bubbly and golden brown.
  5. Let it cool for at least 15 minutes. Serve warm or at room temperature, optionally topped with coconut vanilla ice cream, and refrigerate leftovers for up to 4 days.

Notes

For an extra citrusy flavor, add more lemon zest.
Use fresh blueberries for the best taste, though frozen can work in a pinch.
Add some nuts or seeds for added crunch.
