- 1 ½ cups oat flour
- 1 cup rolled oats, plus more for topping
- 1 tsp baking powder
- ½ tsp baking soda
- 1 tsp cinnamon
- ½ tsp salt
- 2 large eggs
- 1 cup unsweetened applesauce
- ½ cup almond milk
- ½ cup maple syrup
- 2 tbsp melted coconut oil or avocado oil
- 1 tsp vanilla
Instructions
- Preheat your oven to 350°F and line a muffin tin with paper liners or lightly grease the cups.
- In a medium bowl, combine the oat flour, rolled oats, baking powder, baking soda, cinnamon, and salt. Stir to combine.
- In a separate large bowl, whisk together the eggs, applesauce, maple syrup, almond milk, vanilla extract, and oil until smooth and well combined.
- Add the dry ingredients to the wet ingredients and stir gently until just combined, being careful not to overmix.
- Divide the batter evenly among the muffin cups and top with additional rolled oats.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
Notes
Feel free to substitute almond milk with any other milk of your choice.
These muffins can be stored in an airtight container for up to a week or frozen for longer storage.
For an added touch, consider adding nuts or raisins to the batter.
