Instructions
- Preheat the oven to 350°F and prepare a muffin tin with silicone liners or grease it.
- In a large bowl, combine the applesauce, milk, maple syrup, and vanilla. Mix until well combined.
- Add the rolled oats, cinnamon, nutmeg, baking powder, and salt to the wet mixture. Stir until everything is mixed well. Fold in the diced apples.
- Using a cookie scoop, distribute the muffin batter into the prepared muffin tin, filling each cup.
- Bake for 25-28 minutes or until the muffins are golden brown on top.
