Description

Savor the comforting flavors of this Harvest Casserole, featuring chicken sausage, butternut squash, and fresh fall veggies. Perfect for a family dinner or holiday gathering, it combines wholesome ingredients for an effortless and delicious homemade meal.

Ingredients

Scale
  • 3 cups butternut squash cut into 1” cubes
  • 1 lb brussels sprouts halved or quartered
  • 4 tablespoons olive oil divided
  • Sea salt and black pepper to taste
  • 1 small yellow onion diced
  • 4 cloves garlic minced
  • 6 links chicken sausage cut into coin shapes
  • 2 teaspoons fresh rosemary minced
  • 2 teaspoons fresh sage minced
  • 1 teaspoon thyme leaves
  • 2 teaspoons fresh parsley minced
  • 2 cups cauliflower rice fresh or frozen
  • 1 apple finely diced
  • 1/2 cup pecans chopped
  • 1/2 cup dried cranberries juice-sweetened
  • 1/2 teaspoon cinnamon

Instructions

  1. Preheat your oven to 425°F and line 2 baking sheets with parchment paper. Place the squash on one sheet and the Brussels sprouts on the other.
  2. Drizzle both with one tablespoon each of olive oil and sprinkle with salt and pepper. Bake for 25 minutes, stirring Brussels sprouts halfway through. After baking, reduce the heat to 400°F.
  3. In a large skillet over medium heat, add the remaining 2 tablespoons of olive oil. Cook the diced onions until translucent, then add minced garlic for about 30 seconds.
  4. Stir in the chicken sausage and fresh herbs, cooking until the sausage is browned.
  5. Add the cauliflower rice, diced apples, chopped pecans, and cinnamon. Stir until the cauliflower rice and apples begin to soften. Add cranberries and season with salt and pepper, then remove from heat.
  6. Spray a 9 x 13” baking dish with cooking spray and combine the sausage rice mixture with the roasted squash and sprouts in the dish.
  7. Bake in the preheated oven for 12-15 minutes or until the top is toasty. Garnish with fresh herbs if desired and serve as a main or side dish.

Notes

For a vegetarian version, substitute chicken sausage with your choice of meat alternatives.
Ensure the cranberries are juice-sweetened for Whole30 compliance.
This casserole makes great leftovers; store in the refrigerator for up to 3 days.
