- ½ cup pesto
- 2 tbsp yogurt
- 2 tbsp mayo
- 2 tbsp lemon juice
- 2 tbsp water
- 2 garlic cloves, minced
- ¼ tsp salt
- 1 lb. chicken breast, thin sliced or slice larger breasts in half
Instructions
- In a large bowl, mix together the pesto, yogurt, mayonnaise, lemon juice, water, garlic, and salt.
- Add the chicken to the bowl and toss to ensure it's well coated with the marinade.
- Cover the bowl and refrigerate for at least 1 hour, or up to 24 hours for maximum flavor.
- Twenty to thirty minutes before grilling, remove the chicken from the fridge to let it reach room temperature.
- Preheat the grill to medium heat (about 400°F).
- Place the marinated chicken on the grill and cook for 3 minutes on each side.
- Once cooked, transfer the chicken to a cutting board and allow it to rest for a few minutes before slicing.
Notes
Marinating the chicken longer enhances the flavor.
