Description

These Grilled Greek Chicken Kabobs are bursting with flavor from marinated chicken, zucchini, and onions, making them perfect for a quick and healthy meal that’s sure to please everyone.


Ingredients

  • 2 lbs boneless & skinless chicken breasts or thighs, cut into 1-inch pieces
  • 4 large garlic cloves, minced
  • ¼ cup extra virgin olive oil
  • ½ tablespoon dijon mustard
  • Juice of 1 lemon
  • Zest of 1 lemon
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon fresh dill, or ½ teaspoon dried dill
  • 1 teaspoon dried oregano
  • 1 medium red onion, cut into large chunks
  • 2 large zucchini, 1 green and 1 yellow, sliced into ½ to 1-inch half moons
  • 1012 skewers, soaked in water for 30 minutes if using wooden skewers

Instructions

  1. Marinate the chicken by whisking together olive oil, lemon juice, lemon zest, garlic, and Dijon mustard in a large bowl.
  2. Add the chicken, dried dill, oregano, salt, and pepper to the bowl, tossing to coat completely. Cover and refrigerate for at least 30 minutes, or overnight if possible.
  3. Assemble the skewers by threading the zucchini, onion, and marinated chicken onto them, alternating the ingredients.
  4. Preheat the grill to medium-high or high heat and lightly oil the grates.
  5. Grill the kebabs for 10-12 minutes, turning occasionally, until the chicken is cooked through and reaches an internal temperature of 165°F.
  6. Serve the skewers on a platter, garnished with fresh dill, and alongside tzatziki, lemon wedges, and your favorite sides.

Notes

Marinating overnight enhances the flavors.
Use a meat thermometer for perfect chicken doneness.
You can substitute vegetables based on your preference.
