Description

This Grilled Corn Salad is bursting with flavor and freshness. Made with sweet, grilled corn, crunchy cucumbers, juicy tomatoes, and fresh herbs, it’s a must-have for every summer cookout. Easy to prepare and perfect as a side dish for any meal!


Ingredients

  • 4 ears corn, shucked and silks removed
  • ¼ cup olive oil
  • 1 cup cherry or grape tomatoes, quartered
  • 1 english cucumber, sliced and quartered
  • ½ medium red onion, diced
  • ¼ cup chopped fresh herbs (like parsley, dill, cilantro, basil, mint, or tarragon)
  • 2 tablespoons apple cider vinegar
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • optional: crumbled feta

Instructions

  1. Preheat an outdoor grill or indoor grill pan to medium-high heat. Brush the corn with 2 tablespoons of olive oil and grill for 8 to 10 minutes, rotating occasionally for even charring. Remove the corn to a plate.
  2. Once cool, use a large knife to shave off the kernels from the grilled corn.
  3. In a bowl, combine corn kernels, tomatoes, cucumber, red onion, and herbs. Add the remaining 2 tablespoons of olive oil, apple cider vinegar, salt, and pepper. Stir until well mixed.
  4. If desired, garnish with crumbled feta before serving.

Notes

For added flavor, feel free to mix different fresh herbs based on your preference.
This salad can be served warm or cold, making it versatile for any occasion.
Leftovers can be stored in the refrigerator for up to 2 days.
