Description

These Grilled Chicken Sandwiches make for a satisfying and flavorful meal, loaded with juicy chicken breasts, creamy garlic aioli, and fresh toppings. Perfect for a quick BBQ lunch or a delicious dinner option. Simple to prepare yet packed with vibrant flavors!


Ingredients

  • 4 boneless skinless chicken breasts (about 68 oz each)
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 ½ teaspoons salt
  • Black pepper to taste, optional
  • Avocado oil or other high-heat oil
  • 1 cup mayonnaise
  • 3 cloves garlic, minced
  • 1 tablespoon dijon mustard or add sriracha to taste for a spicy version
  • 1 tablespoon lemon juice
  • 4 brioche buns or ciabatta rolls
  • 2 avocados, sliced
  • 1 large tomato, sliced
  • lettuce leaves or arugula
  • 8 slices crispy bacon
  • ½ red onion, thinly sliced
  • Dill pickles
  • hot honey for drizzling

Instructions

  1. Make the garlic aioli by mixing all ingredients in a small bowl until well combined. Cover and set aside.
  2. Dry the chicken with paper towels. Preheat the grill to medium-high heat. Combine the seasonings and rub them on the chicken, coating both sides evenly with high-heat oil and spices.
  3. Grill the chicken for 4-7 minutes on each side, or until the internal temperature reaches 165°F (74°C). Let it rest before assembling the sandwiches.
  4. While the chicken rests, slice the brioche buns and lightly toast them on the grill.
  5. Spread garlic aioli on the bottom half of each toasted bun and place a grilled chicken breast on each.
  6. Layer avocado slices on top of the chicken, followed by tomato slices and a few lettuce leaves. Add crispy bacon and pickles if desired.
  7. Drizzle hot honey over the top to taste, then place the top bun on each sandwich.
  8. Serve immediately while the buns are warm and flavors are fresh.

Notes

For extra flavor, marinate chicken in the spice mix for 30 minutes before grilling.
Feel free to customize the toppings based on your preferences, like adding cheese or different vegetables.
Make the garlic aioli ahead of time to save prep time.
