- 3 tablespoons butter, divided
- 2 large onions, thinly sliced
- 2 pounds ground beef
- 2 eggs
- 1/2 cup breadcrumbs
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon flour
- 1 cup beef broth
- 1/2 cup Swiss cheese, shredded
- 4–5 slices provolone cheese
Instructions
- Preheat the oven to 350°F (175°C).
- Melt 2 tablespoons of butter in a large skillet over medium heat, add the sliced onions, and cook until caramelized (20-25 minutes). Set half aside for sauce.
- In a bowl, combine ground beef, eggs, breadcrumbs, Worcestershire sauce, thyme, salt, pepper, and remaining onions; mix gently.
- Shape the mixture into a loaf and place in a baking dish, then bake for 45 minutes.
- In the skillet, return reserved onions, add the last tablespoon of butter, and melt. Stir in flour; cook for a minute, then whisk in beef broth and simmer until thickened.
- Remove the meatloaf; top with Swiss cheese and provolone slices. Broil for 3-5 minutes until cheese is golden, then let rest for 5-10 minutes before slicing.
Notes
For added flavor, try adding some garlic powder to the meat mixture.
Make sure to let the meatloaf rest before slicing to keep it moist.
This dish pairs well with mashed potatoes or a fresh salad.
