Description

These Fluffy Apple Cinnamon Pancakes are a delightful breakfast option. They’re perfectly fluffy with a hint of cinnamon and sweet apples, making them irresistible. Perfect for a cozy morning or brunch with family!

Ingredients

Scale
  • 1 1/2 tsp Butter
  • 2 tsp Cinnamon
  • 1 cup Apples (Peeled, Cored & Diced)
  • 2 cups Flour
  • 3 tbsp Brown Sugar
  • 2 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/2 tsp Salt
  • 2 cups + 2 tbsp Buttermilk
  • 4 tbsp Butter, Melted
  • 2 Eggs
  • 1 tsp Vanilla
  • 2 tbsp Butter
  • 2 Apples (Peeled, Cored & Diced)
  • 2 tbsp Brown Sugar
  • 1/2 tsp Cinnamon
  • 1/3 cup Maple Syrup

Instructions

  1. In a small bowl, whisk together the brown sugar and 1 tsp cinnamon. Toss in 1 cup of diced apples until coated and set aside.
  2. In a large bowl, whisk together flour, remaining brown sugar, baking powder, baking soda, 1 tsp cinnamon, and salt.
  3. In a separate bowl, pour in the buttermilk and slowly drizzle in the melted butter while whisking until combined.
  4. Add eggs and vanilla to buttermilk mixture and whisk until fully combined.
  5. Pour the wet ingredients into the dry mixture and stir until just combined. Fold in the coated apples gently until combined.
  6. Heat a skillet over medium heat and spray with non-stick cooking spray.
  7. Scoop 1/3 cup of batter onto the skillet to form pancakes.
  8. Cook until edges appear set and bubbles form in the center, then flip carefully and cook until golden brown.
  9. Repeat with the remaining batter.
  10. Optional: For the apple topping, combine butter, diced apples, brown sugar, cinnamon, and maple syrup in a saucepan over medium heat. Cook and stir frequently for 3-5 minutes until the apples are tender. Serve over pancakes.

Notes

For an extra fluffy texture, do not overmix the batter; it’s okay if a few lumps remain.
Use fresh, crisp apples for the best flavor and texture in your pancakes.
Feel free to substitute regular milk for buttermilk if necessary.
