- ½ pound (8 ounces) penne pasta
- 3 tablespoons butter
- 1/2 tablespoon flour
- 2 cloves garlic, minced
- 2 cups corn, fresh or frozen
- 2/3 cup heavy cream
- 1 tablespoon lemon juice, freshly squeezed
- 1/2 cup parmesan cheese, freshly grated
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
- 1/4 cup fresh basil
Instructions
- Boil salted water in a large pot. Add penne and cook until al dente, about 8–10 minutes. Reserve ½ cup pasta water, then drain.
- Melt butter in a large skillet over medium heat. Whisk in flour and cook for 1 minute.
- Add minced garlic and corn to the skillet, cooking for 2 minutes until fragrant.
- Stir in heavy cream, lemon juice, and reserved pasta water. Cook, stirring, until smooth and slightly thickened.
- Mix in Parmesan cheese and let it melt into the sauce. Adjust thickness with more pasta water if needed.
- Season with salt and pepper. Add cooked pasta and basil to the skillet, tossing gently to coat.
- Serve hot, topped with additional Parmesan and basil.
Notes
For a lighter version, substitute half of the heavy cream with low-fat milk.
Feel free to add other vegetables like spinach or zucchini for extra nutrients.
Mix the sauce over low heat to prevent sticking or burning.
