Elevate your meal with Easy Creamy Corn Pasta. This delightful dish blends tender penne pasta with sweet corn and a rich creamy sauce, perfect for a comforting dinner.


Ingredients

  • ½ pound (8 ounces) penne pasta
  • 3 tablespoons butter
  • 1/2 tablespoon flour
  • 2 cloves garlic, minced
  • 2 cups corn, fresh or frozen
  • 2/3 cup heavy cream
  • 1 tablespoon lemon juice, freshly squeezed
  • 1/2 cup parmesan cheese, freshly grated
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 1/4 cup fresh basil

Instructions

  1. Boil salted water in a large pot. Add penne and cook until al dente, about 8–10 minutes. Reserve ½ cup pasta water, then drain.
  2. Melt butter in a large skillet over medium heat. Whisk in flour and cook for 1 minute.
  3. Add minced garlic and corn to the skillet, cooking for 2 minutes until fragrant.
  4. Stir in heavy cream, lemon juice, and reserved pasta water. Cook, stirring, until smooth and slightly thickened.
  5. Mix in Parmesan cheese and let it melt into the sauce. Adjust thickness with more pasta water if needed.
  6. Season with salt and pepper. Add cooked pasta and basil to the skillet, tossing gently to coat.
  7. Serve hot, topped with additional Parmesan and basil.

Notes

For a lighter version, substitute half of the heavy cream with low-fat milk.
Feel free to add other vegetables like spinach or zucchini for extra nutrients.
Mix the sauce over low heat to prevent sticking or burning.
