Ingredients

  • 5 graham cracker sheets
  • 1 box of brownie mix for an 8×8 inch pan
  • 2 egg yolks
  • 1/2 cup vegetable oil or melted butter
  • 1/3 cup brewed hot coffee
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/2 cup chocolate chips
  • 2 cups mini marshmallows

Instructions

  1. Preheat the oven to 325°F and line the bottom of an 8×8 inch baking pan with parchment paper or aluminum foil, leaving an overhang on the sides.
  2. Arrange the graham cracker sheets in a single layer at the bottom of the pan, breaking them as needed to cover the entire surface.
  3. In a large mixing bowl, combine the brownie mix, egg yolks, hot brewed coffee, vegetable oil, vanilla extract, and salt. Gently fold in the chocolate chips.
  4. Pour the brownie batter over the graham cracker layer in the prepared pan and bake in the preheated oven for 40 minutes.
  5. Carefully remove the brownies, and sprinkle mini marshmallows over the top. Return to the oven and bake for another 3-4 minutes.
  6. Take the pan out of the oven and use a kitchen torch to toast the marshmallows. Allow the brownies to cool completely before slicing.

Notes

For easy removal, let the brownies cool in the pan after baking, using the parchment overhang.
Experiment with flavor by adding nuts or different types of chocolate chips to the mix.
Store leftover brownies in an airtight container at room temperature for up to 3 days.
