- 2 1/2 cups flour
- 1/2 tbsp sugar
- 1/2 tsp salt
- 1 cup butter, cold & diced
- 7 tbsp cold water
- 1 egg + 1 tbsp water for egg wash
- sugar for sprinkling, optional
- 2 tbsp water
- 2 tsp lemon juice
- 1 tsp vanilla
- 6 cups blackberries
- 3/4 cup sugar
- 5 tbsp cornstarch
Instructions
- In a food processor, combine flour, sugar, and salt; pulse to mix.
- Add cold, diced butter to the mixture and pulse until it resembles coarse crumbs.
- Gradually add cold water, pulsing until moist clumps form.
- Transfer the dough to parchment paper, divide into two balls, flatten into discs without kneading.
- Wrap each disc in plastic wrap and refrigerate for one hour.
- Preheat your oven to 400 degrees Fahrenheit once the crust is ready.
- For the filling, combine water, lemon juice, vanilla, and blackberries in a saucepan over medium heat.
- Gently mix in sugar and cornstarch, cooking until the mixture thickens; set aside to cool.
- Roll out the bottom crust into a 12" circle on a floured surface, transfer it to a 9" pie plate.
- Pour the blackberry filling into the crust, spreading it evenly and avoiding the edges.
- Roll out the second crust and cover the top of the pie, trimming excess edges.
- Seal edges with fingers or a fork, then prepare egg wash with whisked egg and water, brushing it over the pie.
- Optionally, sprinkle sugar on top of the pie.
- Cut slits in the center for venting steam.
- Bake for 15 minutes at 400 degrees, then lower to 350 degrees and bake for an additional 45-50 minutes until filling is bubbly and crust is golden brown.
- Check the pie after 30 minutes; if crust browns too much, cover it.
- Allow cooling at room temperature before slicing and serving.

Using cold butter ensures a flaky texture in the crust.
Letting the pie cool before slicing helps to set the filling for cleaner pieces.
If berries are sweet, you may reduce sugar in the filling.
