Description

This easy black bean dip is packed with flavor from black beans, garlic, and jalapeños. Perfect for pairing with chips, it’s a simple and delicious addition to any gathering or meal.


Ingredients

  • 2 tablespoons olive oil
  • 1 medium red onion, chopped small
  • 4 cloves garlic, minced
  • 2 jalapeño peppers, seeded and chopped (or 4 oz canned diced jalapeños)
  • 2 (15-ounce) cans black beans, drained and rinsed
  • 1/2 teaspoon ground cumin
  • 1 teaspoon salt or to taste
  • 3 tablespoons fresh lime juice
  • 1/4 cup chopped cilantro plus more for serving
  • vegan cheese, optional
  • pickled red onions, optional

Instructions

  1. Warm the olive oil in a small pan over medium heat.
  2. Sauté the chopped red onion, garlic, and jalapeño peppers for 5-8 minutes, stirring frequently, then remove from heat.
  3. In a food processor, combine the drained and rinsed black beans, cooked onion mixture, cumin, salt, lime juice, and cilantro. Process until smooth or to your desired texture.
  4. Transfer the mixture to a serving dish and top with additional cilantro, vegan cheese, and pickled red onions, if desired.
  5. Serve with tortilla chips and enjoy!

Notes

Feel free to adjust the heat by adding more or fewer jalapeños.
This dip can be made a day in advance and stored in the fridge for the flavors to meld.
