Description

This Easy Balsamic Chicken offers an irresistible flavor with minimal prep. Perfect for a quick dinner, it features juicy chicken, tangy balsamic, and fresh ingredients that create a delightful meal.


Ingredients

  • 4 boneless-skinless chicken cutlets pounded to an even thickness (approximately 1 ½ pounds total, each piece approximately ½ inch thick)
  • ⅓ cup balsamic glaze
  • ¼ cup lemon juice
  • 1 tablespoon honey
  • 1 tablespoon minced garlic
  • 1½ teaspoons italian seasoning blend
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 3 tablespoons olive oil divided (2 tablespoons to cook the chicken and 1 tablespoon to mix with the tomatoes and cheese)
  • ¾ cup cherry tomatoes (approximately 1820 tomatoes)
  • ½ cup fresh mozzarella pearls (approximately half of an 8-ounce package)
  • 1 tablespoon fresh basil chopped (plus additional for garnish)

Instructions

  1. Pound the chicken cutlets to an even thickness and season with salt and black pepper.
  2. In a small bowl, mix balsamic glaze, lemon juice, honey, minced garlic, and Italian seasoning.
  3. Heat 2 tablespoons of olive oil in a skillet over medium heat.
  4. Add the chicken cutlets, cooking until golden brown and cooked through, about 5-7 minutes on each side.
  5. Remove chicken from skillet and keep warm.
  6. In the same skillet, add 1 tablespoon of olive oil and cherry tomatoes; cook until tomatoes are soft, about 3-4 minutes.
  7. Stir in fresh mozzarella and basil until cheese melts slightly.
  8. Serve the chicken topped with the tomato mixture and garnish with additional basil.

Notes

For extra flavor, marinate the chicken in the balsamic mixture for up to an hour before cooking.
Feel free to substitute cherry tomatoes with other veggies like bell peppers or spinach for variation.
This dish pairs well with rice or a fresh salad.
