Description

Ingredients

  • 2 ½ cups diced apples (about 3 small/medium apples)
  • 2 teaspoons granulated sugar
  • ½ teaspoon cinnamon
  • ½ cup (62g) all-purpose flour
  • ½ cup (100g) packed brown sugar
  • ¼ teaspoon salt
  • 3 tablespoons (42g) unsalted butter, melted
  • 2 large eggs
  • 1 cup (200g) granulated sugar
  • ½ cup (118ml) vegetable oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon white vinegar
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • ¼ teaspoon salt
  • 1 cup (245g) sour cream
  • 2 cups (248g) all-purpose flour

Instructions

  1. Preheat the oven to 350°F and line muffin pans with paper baking cups.
  2. Prepare the apples by placing the diced apples in a microwave-safe bowl, adding about 1/2 inch of water, and microwaving for about 2 minutes until they start to turn translucent. Drain and sprinkle with sugar and cinnamon. Set aside.
  3. In a medium bowl, mix all the topping ingredients together with a fork and set aside.
  4. In another bowl, beat eggs with sugar and oil until creamy. Add vanilla, vinegar, baking soda, cinnamon, and salt, mixing well. Stir in sour cream and then gradually add flour, mixing until combined but slightly lumpy. Gently fold in the apples.
  5. Fill each muffin cup about 2/3 full with the batter, approximately 1/4 cup per cup. Evenly sprinkle the crumble topping over the muffins.
  6. Bake for 15-19 minutes, or until a toothpick inserted in the center comes out clean. Let the muffins cool in the pan for 5 minutes before transferring to a cooling rack to cool completely.
  7. Store in an airtight container for up to 3 days or freeze for up to one month.

Notes

For added flavor, you can mix some nuts or raisins into the batter or topping.
These muffins are perfect for breakfast or as a sweet snack any time of the day.
