Ingredients

Scale
  • 4 boneless skinless chicken breasts cut into chunks
  • 1 large yellow onion chopped
  • 1 can diced tomatoes with juice
  • 2 tbsp sweet paprika
  • 2 tsp garlic powder
  • 1 cup sour cream
  • salt and pepper to taste
  • fresh parsley for serving

Instructions

  • Place the chicken, onion, diced tomatoes, paprika, garlic powder, salt, and pepper into the slow cooker.
  • Gently mix to ensure everything is combined well.
  • Cover the slow cooker and cook on LOW for 5–6 hours or on HIGH for 3–4 hours until the chicken is tender.
  • Once cooked, stir in the sour cream to create a smooth and creamy sauce.
  • Taste the dish and adjust seasoning if needed, serve with a sprinkle of fresh parsley.

Notes

For a thicker sauce, allow the dish to cook an additional 30 minutes with the lid off after adding sour cream.
Serve over egg noodles or rice for a heartier meal.
