Description
Crispy fried zucchini is a delightful snack or side dish featuring fresh zucchini, panko breadcrumbs, and a hint of salt, perfect for any occasion.

- 2 medium zucchini, sliced
- 2 cups panko breadcrumbs
- 1/2 tsp salt
- 1 cup flour
- 3 eggs, beaten
- oil for frying
Instructions
- Heat oil in a large skillet.
- Slice zucchini into 1/4" rounds and set aside.
- Whisk together breadcrumbs and salt in a bowl.
- Put flour into a shallow plate and beat eggs in another shallow bowl.
- Dredge each zucchini round through the flour, dip into beaten eggs, and then coat with the breadcrumb mixture.
- Fry zucchini rounds until golden brown on both sides. Repeat until all zucchini slices are prepared.
Notes
For extra flavor, add Parmesan cheese to the breadcrumb mixture.
Make sure the oil is hot enough to get the zucchini crispy without becoming greasy.
Serve with marinara sauce or your favorite dipping sauce for added enjoyment.
