Ingredients

  • 1 tablespoon extra virgin olive oil
  • 4 garlic cloves, minced
  • 4 tbsps organic all-purpose flour
  • 1 ½ tbsps tuscan marry me blend
  • 1 teaspoon smoked paprika
  • 1 teaspoon sea salt
  • 34 tbsps organic tomato paste
  • 56 sundried tomatoes, optional
  • 4 cups chicken or vegetable stock, organic
  • 1 ½ cups organic heavy cream
  • ½ lemon, freshly-squeezed
  • 1 cup chopped kale, organic
  • 2 cups cherry or grape tomatoes, halved or whole
  • 2 (8 oz.) packages organic cheese + spinach tortellini
  • 2 bay leaves, optional
  • 1 cup freshly-grated parmesan

Instructions

  1. Heat the olive oil in a medium-sized dutch oven pot over medium high-heat.
  2. Add the minced garlic and sundried tomatoes (if using) along with fresh tomatoes. Sauté for 1-2 minutes until fragrant.
  3. Stir in the Tuscan Marry Me Blend, smoked paprika, and sea salt until combined.
  4. Mix in the tomato paste and flour, stirring until just combined.
  5. Gradually add the chicken or vegetable stock, stirring frequently until thickened.
  6. Incorporate lemon juice, heavy cream, tortellini, bay leaves, and kale while mixing everything together.
  7. Let the soup simmer for 8-10 minutes until thickened and tortellini are cooked through and floating.
  8. Add the freshly-grated parmesan and stir until melted and smooth.
  9. Serve immediately in bowls and top with extra parmesan if desired.

Notes

Feel free to adjust the amount of tomato paste based on your taste preferences.
For extra flavor, consider using herb roasted tomatoes as a substitute for fresh ones.
