- 1 pound ground italian sausage, mild or spicy
- 1 medium white onion, diced
- 1 large carrot, diced
- 5 cloves garlic, minced
- 1/4 cup tomato paste
- 1/2 teaspoon crushed red pepper flakes
- 4 cups chicken stock
- 1 (15-ounce) can white beans, rinsed and drained
- 1 teaspoon italian seasoning
- 1 (15-ounce) can fire-roasted diced tomatoes
- 1 (9-ounce) package cheese tortellini
- 3 cups chopped fresh kale
- 1/2 cup heavy cream
- 1/2 cup parmesan cheese, plus extra for serving
- 3 tablespoons minced fresh basil
- fine sea salt and freshly-ground black pepper
Instructions
- Brown the sausage in a large stockpot over medium-high heat, crumbling it with a spoon until browned. Remove with a slotted spoon and set aside.
- In the same pot, add the diced onion and carrot to the remaining sausage grease and sauté for 5 minutes. Add garlic and sauté for an additional 2 minutes. Stir in the tomato paste and crushed red pepper flakes, and sauté for another 2 minutes.
- Pour in the chicken stock and white beans. Add the italian seasoning and stir well. Simmer until the soup reaches a simmer, then cover and cook on medium-low heat for 5 minutes until the carrots are tender.
- Blend the soup using an immersion blender until smooth.
- Add the reserved cooked sausage, fire-roasted diced tomatoes, tortellini, kale, cream, parmesan cheese, and basil. Stir to combine and cook for 3-5 minutes until the tortellini is tender.
- Season with salt and pepper to taste before serving, adding about 1 teaspoon salt and 1/2 teaspoon black pepper if desired.
- Serve immediately with extra parmesan for garnish.
Notes
Use fresh tortellini for the best flavor and texture.
Feel free to substitute any leafy green for the kale, such as spinach or Swiss chard.
This soup can be stored in the refrigerator for up to three days.
