Description

This creamy tomato basil chicken is a delightful dish featuring tender chicken simmered in a rich cream sauce with sun-dried tomatoes and fresh basil, perfect for a quick, flavorful dinner.


Ingredients

  • 1.5 pounds chicken breast or boneless, skinless chicken thighs
  • 2 tablespoons oil
  • 1 tablespoon ground paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • salt & pepper to taste
  • 1 medium red onion (finely diced, about 1 cup)
  • 2 cloves garlic (minced)
  • ⅓ cup chopped sun-dried tomatoes (not drained)
  • 2 tablespoons tomato paste
  • 8 oz grape or cherry tomatoes (halved)
  • 1.5 cups low-sodium chicken broth
  • ¼ cup sun-dried tomato pesto
  • ⅔ cup heavy cream or to taste
  • 12 teaspoons cornstarch
  • ½ cup fresh basil leaves (not packed, divided use)
  • grated Parmesan cheese (to serve, optional)

Instructions

  1. Cut the chicken into cutlets and gently pound to an even thickness. Rub with 1 tablespoon of oil and seasonings.
  2. Heat a large skillet over medium-high heat, sear the chicken until golden brown, then set aside.
  3. Lower the heat and sauté the diced onion in the skillet until softened. Add the minced garlic and cook for an additional 30 seconds.
  4. Stir in the sun-dried tomatoes, then the tomato paste, and cook until fragrant. Add halved cherry tomatoes and cook until softened.
  5. Pour in the chicken broth, scraping the skillet bottom, then stir in the pesto and simmer. Add ribbons of basil and simmer until slightly reduced.
  6. Reduce heat, whisk cream and cornstarch together, stir into the sauce, then return the chicken to the skillet to simmer until cooked through.
  7. Serve the chicken over pasta, garnished with extra basil and grated Parmesan cheese.

Notes

Use boneless thighs for a juicier option.
Adjust cream and seasoning according to your taste preference.
Leftovers can be stored in the fridge for up to 3 days.
