Description

This creamy Chicken Alfredo is a delightful blend of tender chicken and perfectly cooked fettuccine in a luscious cheese sauce. It’s quick to prepare and comforting, making it an ideal choice for a satisfying weeknight dinner.


Ingredients

  • 200 g chicken breast, cut in half horizontally
  • Salt to taste
  • Pepper to taste
  • 1 tbsp olive oil
  • 250 g fettuccine
  • 2 cups milk, any fat %
  • 1 1/2 cups chicken stock / broth
  • 1 large garlic clove, minced
  • 1/2 cup thickened / heavy cream
  • 3/4 cup freshly grated parmesan
  • Parsley, for garnish

Instructions

  1. Sprinkle both sides of the chicken with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook for 2 minutes on each side until golden and fully cooked.
  3. Remove the chicken to a plate and let it rest for 5 minutes, then slice it while the pasta cooks.
  4. In the same skillet, add the milk, chicken broth, and minced garlic. Bring this mixture to a simmer before adding the fettuccine pasta.
  5. Stir the pasta every 30 seconds until it softens, which should take around 3 minutes. Once softened, lower the heat to medium, stirring occasionally every couple of minutes.
  6. After about 9-10 minutes, the pasta should be almost cooked, and there should still be some liquid left in the skillet. Add the cream and grated parmesan, stirring to combine.
  7. Allow the mixture to simmer for another 2 minutes until the sauce thickens and the pasta is fully cooked. If the sauce becomes too thick, add a splash of hot tap water to get a silky consistency again.
  8. Season with additional salt and pepper to taste, and serve immediately, garnished with more parmesan and parsley.

Freshly grated parmesan enhances the flavor compared to pre-grated options.
If making ahead, store sauce and pasta separately to maintain texture.
