- 2 tablespoons olive oil
- 1 pint cherry tomatoes halved
- 8 ounce block cream cheese very soft
- 4 garlic cloves minced
- ½ teaspoon salt
- ¼ teaspoon pepper
- 2 tablespoons fresh basil chopped
- ¾ cup shredded mozzarella cheese
Instructions
- Preheat the oven to 425°F.
- Arrange the chicken breasts in a single layer in a large baking dish, and season generously with salt, pepper, and Italian seasoning.
- In a medium bowl, mix together the cream cheese, olive oil, garlic, salt, pepper, and fresh basil. Fold in the cherry tomatoes until well combined.
- Spread the cream mixture evenly over the chicken breasts, ensuring they are fully covered.
- Bake for 30-40 minutes, or until the chicken is no longer pink in the middle.
- Top with shredded mozzarella and broil for 4-5 minutes until bubbly and golden.
- Garnish with additional basil before serving.
