Description

This Cowboy Chicken is a delightful blend of smoky spices, tender chicken, and colorful veggies. Perfect for a quick and delicious dinner, it brings comfort and flavor to your table with its easy preparation and fresh ingredients. Ideal for all food lovers!


Ingredients

  • 4 chicken cutlets or 2 chicken breasts cut horizontally
  • 1½ teaspoons smoked paprika
  • ¾ teaspoon garlic powder
  • ¾ teaspoon onion powder
  • ¾ teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil divided
  • 1 small yellow onion diced
  • 1 (15 ounce) can black beans drained and rinsed
  • 1 (15.25 ounce) can corn kernels or southwest corn drained
  • 1 (10.5 ounce) can diced tomatoes with chilies or petite diced tomatoes drained
  • 2 tablespoons fresh lime juice juice from 1 lime
  • ¼ cup barbecue sauce any variety
  • ¾ cup shredded mexican cheese blend
  • chopped fresh cilantro jalapeños and avocado for serving

Instructions

  1. Preheat the oven to broil (500°F) and set the rack 6 inches below the broiler.
  2. In a small bowl, combine the smoked paprika, garlic powder, onion powder, salt, and pepper. Set aside 1½ teaspoons of the seasoning to use for the cowboy caviar.
  3. Season both sides of the chicken with the seasoning mix.
  4. In a large oven-safe skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the chicken breasts in batches if they don't all fit, and cook for 3-4 minutes per side, or until fully cooked (165℉). Transfer to a plate.
  5. Reduce heat to medium, and add the remaining tablespoon of oil to the skillet. Add onion and cook until tender, about 4-5 minutes.
  6. Add beans, corn, diced tomatoes, the reserved seasoning mix, and lime juice to the skillet. Stir to combine. Cook 4-5 minutes until heated through.
  7. Return the chicken to the skillet. Brush the barbecue sauce over the chicken and top with the shredded cheese.
  8. Broil for 2-3 minutes, or until cheese is melted and bubbly.
  9. Serve topped with sliced jalapeños, chopped cilantro, and avocado if desired.

Notes

For extra flavor, marinate the chicken in the spice mix for a few hours before cooking.
You can substitute black beans with pinto beans if preferred.
Feel free to add your favorite toppings such as sour cream or extra cheese.
