Description

Ingredients

  • ½ cup all-purpose flour
  • ½ teaspoon kosher salt
  • 1 cup 4% cottage cheese
  • ½ cup water
  • 3 large eggs
  • 2 tablespoons unsalted butter
  • 1 tablespoon maple syrup
  • ½ cup heavy cream
  • ¾ cup 4% cottage cheese
  • ¼ cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon espresso powder
  • 2 tablespoons cocoa powder

Instructions

  1. Preheat the oven to 350℉. Line a standard baking sheet (12"x18") with parchment paper and spray with nonstick cooking spray.
  2. Add the crepe ingredients to a high-speed blender and blend until smooth.
  3. Transfer the crepe mixture to the prepared baking sheet.
  4. Bake at 350℉ for 10 minutes. Remove from the oven and allow to cool for a few minutes before refrigerating for an hour.
  5. To make the filling, blend cottage cheese, syrup, vanilla extract, and espresso powder until smooth. Set aside.
  6. In a large bowl, whip heavy cream until stiff peaks form.
  7. Fold the blended cottage cheese mixture into the whipped cream.
  8. Place the cooled crepe on a cutting board. Spread the filling onto the crepe, leaving 3 inches at one end.
  9. Roll the crepe away from you towards the empty end.
  10. Sift cocoa powder on top, slice, and serve.

Notes

Make sure the crepe is completely cooled before adding the filling to avoid melting the cream.
You can adjust the sweetness by varying the amount of maple syrup in the filling.
This dessert can be prepared a few hours in advance and stored in the refrigerator until ready to serve.
