Ingredients

  • 10 ounces fettuccine pasta (or your favorite pasta)
  • 1 teaspoon salt
  • 2 tablespoons butter
  • 3 cloves garlic, chopped
  • 1 cup full-fat cottage cheese
  • 1/2 cup parmesan cheese, freshly grated
  • 1/2 cup milk
  • salt and pepper (to taste)

Instructions

  1. Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package directions until al dente, about 2-3 minutes for fresh pasta or 8-10 minutes for dried. Reserve ½ cup of water, then drain and set pasta aside.
  2. Melt the butter in a large skillet over medium heat until bubbly, about 1 minute. Saute the garlic until fragrant, about 30-60 seconds.
  3. Transfer the garlic butter to a blender. Add cottage cheese, Parmesan cheese, and milk, and blend until smooth and creamy, about 1-2 minutes.
  4. Pour the blended sauce back into the skillet. Heat over medium-low, stirring until warmed through and slightly thickened, about 3-5 minutes. Adjust consistency with reserved pasta water, and season with salt and pepper to taste.
  5. Toss the cooked fettuccine in the creamy cottage cheese alfredo sauce until evenly coated. Serve warm with additional Parmesan if desired.

Use fresh pasta for a quicker cook time and a more tender bite.
