Description

This Classic Caesar Salad features crisp romaine, creamy dressing made with egg yolk, and loads of parmesan. It’s perfect for a quick dinner or a healthy side!


Ingredients

  • 1 large egg yolk
  • 1 tablespoon dijon mustard
  • 1 tablespoon lemon juice
  • 1/2 cup olive oil, up to 3/4 cup
  • 1 teaspoon anchovy paste
  • 1/2 cup grated parmesan cheese
  • 2 cloves garlic, grated
  • 1 teaspoon worcestershire sauce
  • 1 teaspoon cracked black pepper
  • Salt to taste
  • 910 oz. romaine lettuce, chopped (~5 cups)
  • 1/2 cup shredded parmesan cheese
  • 1 cup croutons

Instructions

  1. In a medium bowl, whisk together the egg yolk, dijon mustard, and lemon juice until frothy.
  2. Gradually drizzle in the olive oil while whisking vigorously until the mixture thickens.
  3. Stir in the anchovy paste, grated parmesan cheese, garlic, worcestershire sauce, and cracked black pepper, mixing well. Adjust salt to taste, then set aside.

Notes

For a creamier dressing, consider adding more olive oil.
Feel free to add grilled chicken for a hearty meal.
Make this salad a day ahead; just keep the dressing separate until serving.
