- Shred zucchini until you have 2 cups, which is typically about 2 medium zucchinis.
- In a large mixing bowl, cream the softened butter, brown sugar, eggs, and vanilla together until the mixture is smooth and well combined.
- Incorporate the cinnamon, flour, salt, and baking powder into the mixture until everything is combined thoroughly.
- Gently fold the shredded zucchini and chocolate chips into the batter until evenly distributed.
- Pour the batter into the prepared baking pan and spread it out evenly.
- Bake in the preheated oven for 30 to 35 minutes, until a toothpick inserted in the center comes out clean.
