  • 1/2 cup butter, softened
  • 1/2 cup brown sugar
  • 2 eggs
  • 1 tbsp vanilla
  • 1 tsp cinnamon
  • 1 3/4 cups flour

  • 1 1/2 tsp baking powder
  • 1 (11 oz) bag chocolate chips

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Prepare a 9 x 13 inch baking pan by spraying it with non-stick spray and set it aside.
  2. Shred zucchini until you have 2 cups, which is typically about 2 medium zucchinis.
  3. In a large mixing bowl, cream the softened butter, brown sugar, eggs, and vanilla together until the mixture is smooth and well combined.
  4. Incorporate the cinnamon, flour, salt, and baking powder into the mixture until everything is combined thoroughly.
  5. Gently fold the shredded zucchini and chocolate chips into the batter until evenly distributed.
  6. Pour the batter into the prepared baking pan and spread it out evenly.
  7. Bake in the preheated oven for 30 to 35 minutes, until a toothpick inserted in the center comes out clean.
  8. After removing the bars from the oven, press some additional chocolate chips into the top for added texture.
