- 1 medium yellow squash

- 4 oz parmesan cheese
- 4 oz mozzarella
Instructions
- Preheat the oven to 375˚F.
- Chop the zucchini, squash, and onion and combine them in a bowl.
- Layer the chicken breasts in a large casserole dish, seasoning with salt, pepper, and garlic powder.
- Spread the chopped veggies over the chicken, then dollop the pesto on top.
- Optionally, add the cheese now or wait until the last 10 minutes of baking for a gooey topping.
- Bake for 35-45 minutes until the chicken reaches an internal temperature of 165˚F, covering with foil if it browns too quickly.
