Description

This Chicken Parmesan is cherished for its crispy coating and rich flavor, featuring tender chicken, zesty marinara, and gooey mozzarella cheese. Perfect for a quick dinner or a comforting meal at home.

  • 4 pieces boneless, skinless chicken breasts pounded to 1/2-inch thickness
  • 1 cup all-purpose flour for dredging
  • 2 large eggs beaten
  • 1.5 cups seasoned italian breadcrumbs use panko for extra crunch
  • 0.5 cup grated parmesan cheese use aged parmesan reggiano for best flavor
  • 1.5 cups vegetable oil for frying
  • 2 cups marinara sauce preferably homemade or high-quality jarred like rao’s
  • 1.5 cups shredded mozzarella cheese whole milk mozzarella melts best
  • 0.25 cup parmesan cheese grated, for topping
  • 2 tablespoons fresh basil chopped, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper or foil.
  2. Set up three shallow bowls: one with flour, one with beaten eggs, and the last with a mixture of breadcrumbs and 1/2 cup Parmesan cheese.
  3. Dredge each chicken breast in flour, dip it in the egg, and coat it fully with the breadcrumb-Parmesan mixture, pressing gently.
  4. Heat vegetable oil in a large skillet over medium-high heat. Fry the chicken until golden brown, about 3–4 minutes on each side. Drain on paper towels.
  5. Spread a thin layer of marinara sauce over the baking sheet, place the fried chicken on top, and spoon more marinara over each cutlet. Top with mozzarella and a sprinkle of Parmesan cheese.
  6. Bake for 20–25 minutes until the cheese is melted and bubbly, with an internal chicken temperature of 165°F (74°C).
  7. Remove from the oven and let it rest for 5 minutes, then garnish with fresh basil before serving.

Notes

For extra crunch, you can use panko breadcrumbs instead of regular ones.
Aged Parmesan cheese gives a stronger flavor; consider using it for the best results.
Resting the chicken allows juices to redistribute for better flavor.
