Description

Ingredients

  • 8 ounces rotini pasta
  • 24 ounces marinara sauce
  • 1 teaspoon Italian seasoning
  • 3 cups chicken cooked and shredded
  • 3 cups mozzarella cheese shredded, divided
  • 1 cup Parmesan cheese grated, divided
  • ½ cup panko breadcrumbs
  • 2 Tablespoons butter melted
  • 1/4 teaspoon salt
  • Fresh basil for garnish

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Cook the rotini pasta according to the package instructions, drain, and combine in a large mixing bowl.
  3. Mix in the marinara sauce, Italian seasoning, shredded chicken, 1 cup of mozzarella cheese, and 1/4 cup of grated Parmesan cheese until well combined.
  4. Spread the pasta mixture evenly in the prepared baking dish.
  5. Top with the remaining 1 cup of mozzarella cheese and 1/4 cup of grated Parmesan cheese.
  6. In a small bowl, combine panko breadcrumbs, melted butter, and salt. Sprinkle over the cheese layer.
  7. Cover with aluminum foil and bake for 20 minutes. Remove foil and bake for an additional 10 minutes, until cheese is bubbly and breadcrumbs are golden brown.
  8. Let the casserole rest for 5 minutes, garnish with fresh basil, and serve.

Notes

Feel free to use homemade marinara sauce for added flavor.
This dish can be assembled a day ahead and baked just before serving.
Substitute chicken with turkey for a lighter option.
