Description

Cherry Tomato Pasta is an easy and flavorful dish featuring fresh cherry tomatoes, garlic, and parmesan, making it an irresistible choice for a quick dinner or healthy meal.


Ingredients

Scale
  • 2 tbsp olive oil
  • 4 garlic cloves, minced
  • 24 oz cherry tomatoes, halved
  • 12 oz short pasta, uncooked
  • 2 tsp italian seasoning
  • 1/2 tsp red pepper flakes
  • 1 tsp balsamic vinegar
  • 1/2 tsp sea salt
  • 1/2 tsp pepper
  • 1/3 c grated parmesan
  • 23 tbsp heavy cream
  • 23 tbsp tomato paste
  • pinch of sugar, optional
  • 1/21 c reserved starchy pasta water
  • 1/4 c fresh basil, chopped

Instructions

  1. Bring a large pot of water to a boil. Add pasta and cook until al dente. Reserve some of the pasta water.
  2. Heat a large pan over medium-high heat. Add olive oil and once glistening, add garlic and stir for about 1 minute.
  3. Add tomatoes and cook, stirring occasionally until they start to burst, pressing down to smash them. Simmer until all are broken down. Stir in salt, pepper, seasoning, and balsamic.
  4. Shift heat to medium-low, add cream and parmesan, stirring until parmesan is fully melted. Add tomato paste and sugar if desired.
  5. Slowly add starchy pasta water to thin out the sauce as it thickens. Start with 1/4 cup at a time.
  6. Stir in the pasta, remove from heat, and add freshly chopped basil. Serve garnished with more basil and grated parmesan.

Notes

You can use any short pasta like orecchiette or rotini for this dish.
Feel free to adjust the level of red pepper flakes according to your spice preference.
For a vegan option, substitute cream and parmesan with plant-based alternatives.
