- 1 lb lean ground beef
- 1 medium onion, chopped
- 2 teaspoons minced garlic
- 1 tablespoon worcestershire sauce
- 1 teaspoon italian seasoning
- 1 teaspoon beef better than bouillon
- ½ teaspoon crushed red pepper flakes, optional
- 1 (14.5 oz) can petite fire roasted tomatoes
- 3–4 small zucchini, cut into quarter pieces
- 1 cup shredded mozzarella cheese
Instructions
- In a large skillet over medium heat, brown the ground beef with the onion, crumbling the meat until no longer pink. Drain excess grease if necessary.
- Add the garlic, Worcestershire sauce, Italian seasoning, beef bouillon, crushed red pepper, and tomatoes (with juice) to the skillet and bring to a simmer. Cook for 5 minutes, stirring occasionally.
- Stir in the zucchini and simmer for an additional 10 minutes until they start to soften.
- Top with shredded mozzarella cheese, reduce heat to low, cover, and let melt for 3-5 minutes. Serve hot.
Notes
For extra flavor, try adding bell peppers or mushrooms.
Feel free to substitute ground turkey or chicken for a lighter option.
