- 3 cups medium shells uncooked
- 3 tablespoons butter
- 1 onion finely diced
- ⅓ cup diced red bell pepper
- 1 teaspoon chili powder
- ½ teaspoon seasoned salt
- 1 (10.5 ounce) can condensed cream of chicken soup
- 1⅓ cups milk
- 3 cups shredded sharp cheddar cheese divided
- ⅓ cup shredded parmesan cheese
- 3 cups cooked chopped chicken
- 4 ounces canned mild green chiles
Instructions
- Preheat your oven to 375°F.
- Cook the medium shells until al dente, following the package instructions.
- In a skillet, melt the butter over medium heat. Add the diced onion and red bell pepper, cooking until tender, about 5 minutes. Stir in the chili powder and seasoned salt.
- In a large bowl, mix the cream of chicken soup, cooked onion mixture, milk, 2 cups of shredded cheddar cheese, and the parmesan cheese. Stir well to combine, then add the chicken, green chiles, and cooked pasta.
- Transfer the mixture into a 9×13 casserole dish, spreading it evenly. Top with the remaining shredded cheddar cheese.
- Bake for 30 to 35 minutes, or until the casserole is hot and bubbly.
Notes
For added flavor, consider using smoked paprika instead of chili powder.
You can substitute rotisserie chicken for convenience or use leftovers from another meal.
If you prefer a spicier dish, mix in some jalapeños or hot sauce.
