Description

Experience the delightful flavors of Campfire Cobbler, combining fresh strawberries, peaches, and rhubarb in a warm, comforting dessert. This easy-to-make recipe requires minimal prep and uses simple ingredients, making it a wonderful choice for any gathering around the campfire.

Ingredients

Scale
  • 2 cups all-purpose flour
  • ½ cup butter, melted
  • 4 teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup granulated sugar
  • 1 cup milk
  • 1 cup strawberries, chopped
  • 1 cup peaches, about 4, chopped
  • 1 cup rhubarb, about 3 or 4 medium stalks, chopped
  • ¼ cup granulated sugar
  • 1 cup fruit juice, or water

Instructions

  1. Prepare your campfire or grill for low heat and add briquettes.
  2. Line your Dutch oven with heavy-duty foil.
  3. Add the chopped fruits and spread them out evenly.
  4. In a bowl, whisk together the flour, salt, sugar, and baking powder.
  5. Stir in the melted butter and milk until just moistened.
  6. Pour the batter over the fruit in the pot.
  7. Add the fruit juice or water on top of the batter.
  8. Cover the pot and position it over half of the briquettes once they are covered in white ash.
  9. Place the remaining briquettes on top using long-handled grilling tongs.
  10. Cook for about 35 minutes until the cobbler is set and lightly golden brown. Check by lifting the lid with tongs.
  11. If necessary, cover again and cook for another 5 minutes, then check again.
  12. Uncover the cobbler and let it rest for 15 minutes before serving with whipped cream or ice cream if desired.

Notes

Use a variety of fruits for different flavor combinations.
Make sure the Dutch oven is well-lined to prevent sticking.
Ensure briquettes are evenly distributed for consistent cooking.
