Description

This Breakfast Casserole features a delightful combination of pork sausage, eggs, and cheddar cheese, making it the perfect dish for a hearty brunch. It’s easy to prepare ahead of time, and everyone will love its rich flavors and comforting texture.


Ingredients

  • 1 pound pork sausage
  • 10 large eggs lightly beaten
  • 3 cups milk
  • 1 teaspoon fine sea salt
  • ½ teaspoon black pepper
  • 6 cups cubed bread
  • 2 cups shredded sharp cheddar cheese
  • ½ cup diced red pepper optional
  • sliced green onion optional

Instructions

  1. Grease a 9x13x2-inch casserole dish.
  2. In a large skillet, cook the pork sausage over medium-high heat, stirring frequently, until thoroughly cooked and no longer pink.
  3. In a large bowl, whisk together the eggs, milk, and salt until well combined.
  4. Evenly distribute half of the bread into the prepared casserole dish. Sprinkle with half of the cheese, half of the black pepper, half of the red pepper, and half of the sausage. Repeat layers with the remaining ingredients.
  5. Pour the egg mixture evenly over the casserole.
  6. Cover and refrigerate overnight, or bake immediately if preferred.
  7. When ready to bake, preheat the oven to 325°F. Bake uncovered for 60-75 minutes, or until eggs are set. If the top begins to brown too quickly, loosely cover the casserole dish with foil.
  8. If desired, sprinkle with sliced green onions before serving. Serve warm.

Notes

You can add more vegetables like diced onions or spinach for extra nutrition.
For a spicier kick, try using hot sausage instead of mild.
Make sure to let the casserole cool slightly before cutting for better serving.
