These Blueberry Pie Bars feature a delightful combination of juicy blueberries and a buttery crust, making them an irresistible treat that’s easy to prepare and perfect for sharing with friends and family.

- 1 ¼ cup all purpose flour
- 1 cup rolled oats
- ½ cup brown sugar
- ½ tsp baking powder
- ½ tsp salt
- 10 tbsp butter, melted
- 1 tsp vanilla
- 3 cups blueberries
- 2 tbsp lemon juice
- ⅓ cup sugar
- 3 tbsp cornstarch
- ½ tsp vanilla
Instructions
- Preheat the oven to 350°F and line an 8×8 baking dish with parchment paper, leaving a 1" overhang for easy removal; set aside.
- In a large bowl, mix together the flour, oats, brown sugar, baking powder, and salt. Pour in the melted butter and vanilla, then stir to combine.
- Press ⅔ of the crust mixture into the bottom of the prepared baking pan and set aside.
- In another bowl, combine the blueberries, lemon juice, sugar, cornstarch, and additional vanilla. Pour this blueberry mixture over the crust.
- Sprinkle the remaining ⅓ crust mixture over the blueberries.
- Bake in the oven for 55 minutes, or until the blueberries are bubbling and the crust is golden. Allow the bars to cool completely in the pan before using the parchment paper to remove them. Slice into 9 bars and enjoy!
Notes
For a sweeter bar, adjust the sugar levels according to your taste.
These bars can be stored in the refrigerator for up to a week.
Serve warm or at room temperature for the best flavor.
