- 3/4 cup butter, softened
- 2/3 cup sugar
- 2/3 cup brown sugar
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 1/3 cups flour
- 1 1/3 cups quick oats
- 1 (8 oz) cream cheese, softened
- 1 (14 oz) can sweetened condensed milk
- 1 tsp vanilla
- 1 egg yolk
- 1 cup blueberries
Instructions
- Preheat the oven to 350 degrees and prepare a 9 x 13 pan with non-stick spray.
- In a mixing bowl, combine the softened butter, sugar, and brown sugar. Stir in the baking soda, salt, flour, and quick oats until mixed.
- Press half of the mixture evenly into the bottom of the prepared pan. Bake for 13 minutes.
- While the base is baking, prepare the filling by beating the softened cream cheese and sweetened condensed milk together until smooth. Add vanilla and egg yolk, mixing well.
- Once the base is baked, remove it from the oven and spread the cream cheese mixture evenly over the top.
- Sprinkle the blueberries on top of the cream cheese layer.
- Sprinkle the remaining crumble mixture over the blueberries and press down lightly.
- Return to the oven and bake for 20-25 minutes, until the edges are golden brown.
- Allow to cool completely before cutting into bars.
Notes
For extra flavor, consider adding a sprinkle of cinnamon to the crumble topping.
Make sure the cream cheese is softened to ensure a smooth filling.
Let the bars cool completely for better cutting and serving.
