Description

These Blueberry Crumble Cheesecake Bars combine rich cream cheese and sweet blueberries in a beautifully baked crust. Perfect for any dessert lover who enjoys a simple yet scrumptious homemade treat!


Ingredients

  • 3/4 cup butter, softened
  • 2/3 cup sugar
  • 2/3 cup brown sugar
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 1/3 cups flour
  • 1 1/3 cups quick oats
  • 1 (8 oz) cream cheese, softened
  • 1 (14 oz) can sweetened condensed milk
  • 1 tsp vanilla
  • 1 egg yolk
  • 1 cup blueberries

Instructions

  1. Preheat the oven to 350 degrees and prepare a 9 x 13 pan with non-stick spray.
  2. In a mixing bowl, combine the softened butter, sugar, and brown sugar. Stir in the baking soda, salt, flour, and quick oats until mixed.
  3. Press half of the mixture evenly into the bottom of the prepared pan. Bake for 13 minutes.
  4. While the base is baking, prepare the filling by beating the softened cream cheese and sweetened condensed milk together until smooth. Add vanilla and egg yolk, mixing well.
  5. Once the base is baked, remove it from the oven and spread the cream cheese mixture evenly over the top.
  6. Sprinkle the blueberries on top of the cream cheese layer.
  7. Sprinkle the remaining crumble mixture over the blueberries and press down lightly.
  8. Return to the oven and bake for 20-25 minutes, until the edges are golden brown.
  9. Allow to cool completely before cutting into bars.

Notes

For extra flavor, consider adding a sprinkle of cinnamon to the crumble topping.
Make sure the cream cheese is softened to ensure a smooth filling.
Let the bars cool completely for better cutting and serving.
