Blueberry Crumble Bars are a delightful treat with a buttery crust, fresh blueberries, and a sweet crumb topping. An easy and tasty dessert for any occasion!

- 1 1/2 cups salted butter, softened
- 1 cup sugar
- 2 teaspoons vanilla extract
- 1/4 teaspoon salt
- 3 cups all-purpose flour
- 1/4 cup sugar
- 1 teaspoon cornstarch
- 4 cups fresh blueberries
- 1 cup powdered sugar
- 2 tablespoons milk
Instructions
- Preheat the oven to 350℉ and line a 9×13 inch pan with parchment paper.
- In a large bowl or stand mixer, combine the butter, sugar, vanilla, and salt.
- Scrape down the sides of the bowl, then stir in the flour.
- Press about 2/3 of the mixture into the prepared pan and bake for 15 minutes.
- Combine the sugar and cornstarch, then add the blueberries and stir well.
- Spoon the blueberry mixture over the bottom crust and spread evenly.
- Top with the remaining crumb mixture.
- Bake for an additional 30-35 minutes or until golden brown and bubbly.
- For the icing (optional), whisk together the powdered sugar and 2 tablespoons of milk, adding more milk as needed for drizzling consistency.
- Drizzle over the cooled bars and enjoy.
Notes
These bars are best served after cooling for a few hours for better slicing.
For added flavor, mix in a teaspoon of lemon zest with the blueberries.
Store the bars in an airtight container for up to a week.
