Ingredients

  • ¾ cup fresh blueberries or frozen
  • 1 tablespoon maple syrup
  • 1 teaspoon lemon juice
  • ¾ cup 4% cottage cheese
  • 3 tablespoons maple syrup
  • ½ teaspoon cornstarch
  • ½ teaspoon vanilla bean paste or extract
  • 1 graham cracker crushed

Instructions

  1. Combine the blueberries, maple syrup, and lemon juice in a small saucepan.
  2. Bring the mixture to a boil, then reduce the heat to low and simmer for 10 minutes until the blueberries reduce by half.
  3. Remove from heat and let cool for 10 minutes.
  4. Blend the cottage cheese, maple syrup, cornstarch, and vanilla until smooth.
  5. Layer the cottage cheese mixture and blueberry sauce in popsicle molds.
  6. Top with crushed graham cracker pieces.
  7. Freeze overnight or for at least 5 hours.

Notes
