Ingredients

  • ½ cup + 2 tablespoons sugar
  • 2 tablespoons ground black sesame seeds
  • 1 flax egg (1 tablespoon ground flaxseed mixed with 3 tablespoons water)
  • 1 teaspoon vanilla bean paste or vanilla extract
  • 1 cup + 2 tablespoons all-purpose flour
  • ¼ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt

Instructions

  1. Grind the black sesame seeds until powdered but not paste-like.
  2. In a bowl, cream together the vegan butter, ½ cup of the sugar, and ground black sesame seeds until light and fluffy, about 1 minute.
  3. Mix in the flax egg and vanilla bean paste for about 10 seconds.
  4. Add sifted flour, baking powder, baking soda, and salt to the mixture. Mix just until a thick cookie batter forms, avoiding overmixing.
  5. Cover the bowl with plastic wrap and refrigerate for 30 minutes to 1 hour.

Notes

For best results, chill the dough longer for greater flavor development.
Adjust the sugar amount if you prefer a sweeter cookie.
