- 8 chicken thighs (bone-in, skin-on)
- 2 tablespoons extra virgin olive oil
- 2 teaspoons garlic powder
- 2 teaspoons onion powder
- 1 ½ teaspoon paprika
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon kosher salt
- ½ teaspoon freshly ground black pepper
Instructions
- Preheat the oven to 425°F (220°C). Allow the chicken thighs to come to room temperature before patting them dry with a paper towel to remove moisture.
- In a small bowl, combine the garlic powder, onion powder, paprika, oregano, thyme, salt, and pepper to create the seasoning mix.
- In a large mixing bowl, place the chicken thighs and add the olive oil along with two-thirds of the spice blend. Use your hands to ensure all sides of the chicken are coated, including underneath the skin.
- Arrange the chicken on a rack placed over a baking sheet and sprinkle the remaining spice mix evenly on top.
- Bake the chicken thighs for 35 to 40 minutes until the internal temperature reaches 170°F. For extra crispiness, turn on the top broiler for an additional 2 to 3 minutes. Allow the chicken to rest for 5 minutes before serving.
