Ingredients

Scale
  • 1 cup blanched almond flour
  • 2 tablespoons coconut flour
  • 2/3 cup tapioca flour or arrowroot flour plus more for rolling
  • 1/2 cup palm shortening or grass-fed butter, chilled
  • 1 tablespoon maple sugar or coconut sugar
  • 1/2 teaspoon fine sea salt
  • 1 large egg
  • 3/4 cup blanched almond flour
  • 6 tablespoons maple sugar or coconut sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon fine sea salt
  • 1/4 cup ghee, or refined coconut oil, solid but slightly softened
  • 1/2 cup pecans or walnuts, chopped
  • 2 1/4 – 2 1/2 pounds firm baking apples (about 6–7 cups once peeled, cored, and sliced into 1/4-inch slices)
  • 1 tablespoon fresh lemon juice
  • 1/3 cup maple sugar or coconut sugar
  • 2 teaspoons cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon fine sea salt
  • 2 tablespoons tapioca flour or arrowroot flour
  • 1 teaspoon pure vanilla extract

Instructions

  1. Combine almond flour, coconut flour, tapioca flour, shortening or butter, maple sugar, and salt in a food processor. Pulse until the mixture looks like coarse crumbs.
  2. Add the egg and pulse again until a thick dough starts to form.
  3. Shape dough into a ball, flatten into a disk, wrap, and refrigerate for 30 minutes, or up to 24 hours.
  4. Preheat oven to 400°F and prepare a 9-inch pie dish.
  5. Roll out the dough on parchment paper to about a 12-inch circle, dusting with tapioca flour if needed.
  6. Invert the pie dish over the dough and flip it into the dish, then press it into the bottom and sides. Repair any cracks that appear.
  7. Chill the prepared crust while you prepare the crumble topping.

Notes

Chilling the dough helps it hold its shape during baking.
Use firm baking apples for optimal texture and flavor.
Feel free to store leftover pie at room temperature for a couple of days or in the refrigerator for longer freshness.
